Got this recipe for Indian Vegetable Stew decades ago from our good friends Smita and Amit. As you may know, many times people from India don't put in amounts, so when we 'dusted' off this recipe, we guessed at the proportions. You can omit veggies you don't like (but the sauce is so flavorful, you might not notice the taste) and possibly add some you do like. Of course, you can make this dish as 'hot' as you'd like. This version in pretty mild.
